Banana Cake


For the base:

2 cups banana slices

3 tablespoons brown sugar

2 tablespoons coconut oil

For the batter:

2 cups whole wheat flour

1 cup all-purpose flour

1 cup brown sugar

1 cup orange juice

2 tablespoons coconut oil

1 tablespoon baking powder

½ cup water

1 pinch salt


1. Pre-heat oven at 180C.

2. Mix all the base ingredients. Put bananas in a cake pan lined with parchment paper.

3. In a bowl combine all ingredients of the batter. Pour over bananas.

4. Bake for about 1 hour. Serve it upside down, so the bananas stay on top.
