Cacao Cupuaçu Cookies


2 cups oat flour

3 tablespoons potato starch

½ cup turbinado sugar

¼ cup cacao

2 tablespoons cupuaçu butter

½ teaspoon vanilla extract

about 6 tablespoons water


1. Pre-heat oven at 200C.

2. In a bowl mix oat flour, potato starch, sugar, cupuaçu butter, add water little by little until dough is formed.

3. Halve dough. In one half add chocolate and more water if needed. Mix well until dough is smooth.

4. With a pasta roll open both doughs separately. Line one on top of the other. Fold dough rolling it.

5. Refrigerate for 10 minutes. Slice roll using a bread knife. Place each slice in a baking sheet lined with parchment paper.

6. Bake for 10 minutes.
