Coconut Cake


1 ½ cups organic sugar

4 eggs

400ml coconut milk

¼ cup coconut oil

2 ½ cups shredded fresh coconut


1. Pre-heat oven at 230C

2. In a bowl whisk eggs and sugar. Add coconut milk, coconut oil and fresh coconut.

3. Oil a cake pan and pour mixture. Bake for 1 hour.
