Coconut Cookie with Babassu


300g of flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon ground cinnamon or nutmeg

120ml of Organic Babassu Toasted Oil

210g of brown sugar powder

1 egg

2 tbsp of milk

90g of shredded coconut


1. Mix all dry ingredients (except sugar) in a bowl and set aside.

2. Beat Organic Toasted Babassu Oil with sugar until creamy and aerated. Add egg and milk and beat until fluffy and smooth.

3. Add the dried mixture and incorporate gently until it forms a homogeneous mass. Separate the dough into 2 parts, mold into plastic wrap and refrigerate for about 1 hour. When firm, remove from refrigerator and cut into 0.5cm slices. Refrigerate again.

4. Bake in preheated oven for about 15 minutes, or until golden brown.
