Gluten Free Chocolate Cake
Ingredients:
70g melted 70% cacao chocolate
½ cup rice flour
½ cup potato starch
1 cup cacao powder
½ cup organic sugar
½ cup coconut sugar
3 eggs
½ cup coconut oil
1 teaspoon coconut oil
1 tablespoon baking powder
1 cup milk
2 cups fresh berries
¼ cup orange juice
½ cup organic sugar
Directions
1. Pre-heat oven at 200C.
2. Melt chocolate and coconut oil.
3. In a mixer bit eggs, sugar, melted chocolate and milk. Bit until well mixed. Add flour, potato starch, cocoa powder, baking powder and bit for 1 minute.
4. Oil and flour a non-stick cake pan. Bake for about 40 minutes.
5. In a sauce pan cook berries, sugar and orange juice for 10 minutes.
6. Let is cool. Pour over cake and serve.
