Chicken Green Curry


1 green bell pepper

1 red pepper, seeded

½ cup basil leaves

1 cup cilantro

1 garlic clove

10cm lemongrass

1 tablespoon coriander

½ teaspoon salt

2 cm ginger

1kg chicken, big dice (breast, tenders, thighs)

½ cup coconut oil

½ cup red onion, small dices

500ml coconut milk

3 tablespoons lime juice


1. Process green peper, pepper, basil, cilantro, garlic, lemongrass, coriander, salt and ginger.

2. Marinade chicken in curry paste and lemon juice.

3. Sautee onion in coconut oil, add chicken and cook until golden brown.

4. Add curry paste and coconut milk. Let it cook a few more minutes and serve
