Fish and Plantain Moqueca
Ingredients:
4 Tilapia fillets
¼ cup coconut oil
1 fresh plantain, sliced.
½ cup fresh coconut flesh, diced
1 red pepper, sliced
1 yellow pepper, sliced
1 tomato, sliced
1 white onion, sliced
200ml think coconut milk
½ cup sliced cilantro
salt to taste
Directions:
1. In a large sauce pot make layers of peppers, onions tomatoes, the 4 fillets, salt and cilantro. Add another layer of peppers,
tomatoesand onions.
2. Add fresh coconut and plantain, coconut milk and coconut oil.
3. Cover pot and let it cook for 35 minutes.
4. Serve with white rice.
