Licuri Vinagrete


4 white fish fillets.

4 tomatoes seeded and medium diced

½ yellow pepper small diced

½ red bell pepper small dice

3 tablespoons finely chopped red onion

¼ cup of diced coconut

4 tablespoons of licuri oil

3 tablespoons apple cider vinegar

Chopped parsley to taste

Chopped Chives to taste

Salt to taste


1. In a bowl mix tomatoes, peppers, coconut, onion, vinegar, 2 tablespoons of licuri oil, chives, parsley and salt. Let it rest for 10 minutes. If necessary, add more oil, vinegar or salt.

2. In a heated non-stick frying pan, place 1 tablespoons of licuri oil. Grill fish in high heat, sprinkle salt and let it brown. Flip it and repeat the grilling process.

3. Pour vinaigrette over the fillets and serve.
