Baked Potatoes On Coconut Oil
Ingredients:
5 potatoes
2 red peppers, sliced
1 red onion, sliced
3 tablespoons coconut oil
1 tablespoon salt
½ cup chopped parsley
Directions:
1. Preheat oven to 230C.
2. In a baking sheet combine potatoes, red peppers, onion, coconut oil and salt.
3. Bake until potatoes are golden brown. About 20 minutes.
4. Mix together parsley and salt if necessary.
